How to Make Incredibly Easy Gluten Free Pancakes
Sunday mornings call for comfort food but you're probably rarely in the mood to slave over a hot stove.
After a couple of misses, we finally struck gold with my incredibly easy gluten free pancakes. As a bonus, they're also vegan and sugar free!
We scoured the internet so you don't have to, and after making a few minor adjustments to three different recipes, we have finally found the perfect way to make sugar free, vegan and gluten free pancakes.
- 1 flaxseed egg (1 tablespoon ground flaxseed with 2.5 tablespoons cold water, leave to set for ten minutes)
- 1 tablespoon coconut oil
- 250 ml unsweetened almond milk
- 1 teaspoon cider vinegar
- 125g Doves Farm gluten free flour
- 1 teaspoon baking powder
- ¼ teaspoon bicarbonate of soda
- 1 pinch of sea salt
Melt the coconut oil in a small pan over a medium heat, then leave to cool slightly.
Combine the almond milk with the cider vinegar. Add the melted coconut oil, then whisk in the flaxseed egg.
Mix the flour, baking powder, bicarbonate of soda and salt and make a well in the middle. Slowly pour in the wet mixture, stirring continuously until combined – don’t worry if there are still a few lumps.
Preheat the oven to its lowest temperature - you will keep the cooked pancakes warm in here. Heat a teaspoon of coconut oil in a large frying pan over a medium heat.
Add a ladleful of the batter to the pan, one ladle = one pancake. How many you cook at a time depends on the size of your pan.
Cook for around 2 minutes or until golden underneath and small bubbles appear on the surface.
Use a palette knife to flip them over and cook for a further 2 minutes or until golden.
Place your cooked pancakes in the oven to keep warm while you make the remaining pancakes.
Decorate as you wish; fresh fruit, lemon etc. If you want something sweet, a generous serving of coconut sugar, sweet freedom or maple syrup/agave nectar tastes delicious.
And there you have it, sugar free, vegan and gluten free pancakes that don't call for too many obscure ingredients.
